Macarons à la clementine
Cette semaine je vous propose une recette de macaron. Ces macarons à la clémentine sont un délice et plairont à tout le monde !
Ingrédients pour 22 macarons
*Pour la pâte de base
3 blancs d’œufs
35 g de sucre en poudre
200 g de sucre glace
110 g de poudre d'amande
colorant orange
*Pour la crème à la clémentine
2 jaunes d’œufs
40 g de maïzena
25 g de beurre
4 clémentines de corse
40 g de sucre
*Mixer et tamiser le sucre glace avec la poudre d'amande. Monter les blancs d'oeufs en ajoutant le sucre en poudre au fur et à mesure, mélanger délicatement à l'aide d'une spatule en plastique ou d'une corne. Incorporer le sucre glace et la poudre d'amande aux blancs toujours avec une spatule ou une corne jusqu'à obtenir d'un mélange souple et brillant. Ajouter quelques goûtes de colorant orange. Dresser les macarons à l'aide d'une poche à douille lisse en leur donnant une forme de 2 à 4 cm de diamètre, laissez les croûter 20 minutes minimum et faites les cuire sur 3 plaques à pâtisserie identiques au four pendant 12 minutes à 150°C. Laissez les refroidir.
*Délayer la maïzena avec 20cl d'eau. Mettre ce mélange dans une casserole avec le beurre et faite épaissir. Hors du feu, ajouter le zeste et le jus des clémentines puis les jaunes et le sucre. Laissez refroidir avant de garnir les macarons.
